GOOP Tacos



What's wrong with this picture? Well, not much. Love the lime, love the avocado, love the white onion, love the Cotija. Once again, what's wrong with this picture? Well, it really comes down to the green leafy bunch to the left. It's, dun dun dun, cilantro. Since I happen to be one of those people who dislike the herb immensely, you (cilantro-phobes, that mean you) might be wondering why I bought it last night at Whole Foods. I guess it would all be different it I hadn't watched this 3 times in the past 2 days:



Something clicked between Gwyneth Paltrow's latest GOOP post and me, and it wasn't just the mouse on the keyboard. Her latest Make newsletter featured Baja Shrimp Tacos, as well as the guacamole, pico de gallo and the black beans that appropriately go into them. Here's when we answer the original question I asked, what's wrong with this picture?



Nothing, because GOOP's family style Mexican dinner was a hit! I knew that my friends all love cilantro for its summery fresh (ick!, smiley face) flavor. But that's not the only reason I pulled it out of the produce bin (with my bare hands, I know!) and followed Gwynnie's directions. The black beans called for 4 cilantro stems. From the first time I watched the 6 minute long cooking video, I was not repulsed, repelled or revolted. I thought, I could do that. I could spice it up with a few green stems. No prob! I could grow up. There was already no doubt we would make the kid-friendly version, sans crushed cilantro leaves (although GOOP's kid-friendly version was sans pepper...we were sans pepper because I forgot to get it. GOOPS!). Incorporating cilantro was my time to be a big girl, or a least something in between Mrs. Chris Martin and young Apple.



Alas, and obviously, this Mexican inspired dinner for 4 was amazing, and I highly recommend it now that the cold weather is "donesville" and summer's a stone's throw away. Who wouldn't love the grape tomato salsa, or the "shmear" of guac...? It was delish!



Or, as Gwyneth would say, "home run, people."

  1. Those look like they turned out great. I don't hate cilantro, but I don't love it. I am happy with minimal cilantro on/in my food!
